Vegetarian Dan Dan Noodles

minutesA relatively easy-to-make weeknight meal. Also good refrigerated the next day. Adapted from the recipe for Dan Dan Noodles in Fuchsia Dunlop’s Every Grain of Rice.
Ingredients
2 tbsp Dan Dan noodle sauce (I use Spicy King brand)
1 tbsp Lao Gan Ma sauce
11 oz vermicelli
5 green onions
4 Morningstar Farms sausage links
1 tbsp olive oil
1 tsp sweet fermented sauce
2 tsp port (or Shaoxing wine)
1 tsp light soy sauce
3 qts water
8 baby Shanghai bok choy
Directions
- Thaw sausages in microwave, then chop into small pieces (1/8 inch diameter).
- Fry sausage crumbles in pan with oil until heated thoroughly.
- Stir sweet fermented sauce, soy sauce, and port into sausage crumbles. Remove from heat.
- Heat pot of about 3 qts water to boiling. Clean bok choy under running water.
- Cut up green onions and add to large bowl.
- Add Dan Dan noodle sauce and Lao Gan Ma sauce to bowl.
- Blanch bok choy in boiling water for a couple of minutes.
- Add 3/4 cup of hot bok choy water to large bowl and stir with green onions.
- Add vermicelli to remaining hot water and heat to boiling.
- When vermicelli are al dente, drain, and add to large bowl.
- Stir, top with cooked bok choy, and sausage crumbles, and serve.
