Apple Cake

servingsThis is a very moist cake that my mother always made for my birthday. It is best without any icing.
Ingredients
5 chopped firm medium-sized peeled apples
1 cup coarsely chopped walnuts
3 large eggs, room temperature
1 3/4 cup granulated sugar
1 cup vegetable oil
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
Juice of 1/2 lemon
Directions
- Chop walnuts and apples (pieces should be irregular from roughly ½ x ½ x ½ inch cubes to roughly 1 x 1 x 3/8 inch slices), and immediately mix the lemon juice into the apples to prevent them from browning.
- Cream eggs and sugar in a large bowl with electric mixer.
- Add oil and vanilla.
- Whisk flour, cinnamon, baking soda, and salt in separate bowl by hand, and then mix with wet ingredients until just combined. This will form a fairly stiff batter so use a slow mixing speed.
- By hand, fold in apple chunks and walnuts.
- Lightly grease large (12-cup) tube or Bundt pan, and transfer batter into it.
- Bake at 350 degrees for 50-70 minutes or until a toothpick comes out clean. If the top is getting too brown, cover with aluminum foil.
- Remove from oven and let stand for 15-20 minutes, then invert over rack.
